I don’t feel qualified to say who is “good,” but I can tell you that one quality I appreciate in a person is the ability to enjoy dessert.
“I don’t like sweets.”
“Sugar is bad.”
“I’ve never even tried hot fudge.”
“Those are just empty calories.”
And the worst one of all:
“No birthday cake for me.”
Diabetics get a pass, but generally these are the types of statements that have me looking over your shoulder for someone else to talk to. Enjoy your marathon training or whatever. Imma go talk to the happy laughing people on the porch eating cake.
It took quite a while, but I finally turned my husband into a true dessert guy. He’s disappointed if we don’t have anything homemade on hand for dessert.
Yesterday, he spotted a 3-ingredient peanut butter cookie recipe in the NYT and then just whipped them up — all by himself. I now feel I have succeeded in life. I will not grow old eating dessert all alone, with another person sitting right there.
The three ingredients are: one egg, one cup peanut butter, and half a cup of sugar.
Here’s the recipe from New York Times Cooking:

I’m going to pass on the cookies because I hate peanut butter, but kudos to turning another soul to the dark (chocolate) side of life.
No dessert?
No thank you!

Yes, I was impressed! They’re a bit crunchy (like shortbread almost) when cooled. Very peanut buttery.

It’s been a long time as I haven’t baked for a long time and I don’t have any plans to, but I one time made peanut cookies.
I made some other versions too around that time when I used to bake and all very nice. Enjoy. Which I know you are.

No flour? Surprising. But they do look delicious. I want you to know that I am your sister when it comes to dessert. Too sweet is a meaningless concept to me. I will always have a piece of birthday cake. I have been known to have a hot fudge sundae for lunch. Of course, some restraint is in order, which is not easy for me, and as a result I am carrying a few more pound than I should. But long live dessert! This weekend, we are getting together with friends, and I am putting together ice cream nachos for dessert. There will be pictures on my blog come Monday.

Peanut butter cookies MUST have the fork indentation. Makes me think about my childhood.

They really do! He debated it for a sec, but then added the fork lines.😉
