Muffins and Thoughts

I may turn this into a baking blog for the next four years.

As the holidays are over, I wanted to veer away from decadent cookies, and try some healthier stuff. I’ve always liked “morning glory” muffins and this recipe from Sally is a winner. They are moist and delicious. I never make recipes with 18(!) ingredients, but I happened to have most of them in the house already. The only things I had to go buy was ground flax seed and unsweetened apple sauce. I substituted coconut flakes for the pecans, because I am allergic to tree nuts.

Random thoughts from the past two days:

I didn’t watch the inauguration live, but the photos were unavoidable. Melania’s hat was a lousy choice for an indoor inauguration. Even if the inauguration had been outside, she did not need a brim that wide! She looked so severe and frankly, mean, in that navy blue get-up. Major Cruella de Vil vibes.

The Washington DC Episcopalian Bishop has balls, asking Trump to his face to have mercy on the people he attacks. Good for her!

  1. I actually have many of the ingredients, too. I was surprised at the amount of sugar. I was expecting it to call for more. Maybe because there is also honey? I’ll have to wait until the egg shortage ends before giving it a go. I’ve been to the market 3 times and no eggs in sight! A stood with a bunch of random strangers in the egg section at Costco looking at empty pallets. If Costco doesn’t have eggs, WTF. Once I try it, I’ll let you know!

    1. You know, you’re right, it’s got half the sugar of my favorite blueberry muffin recipe. But they are plenty sweet with the honey. The orange flavor really comes through (I used fresh squeezed.)
      An egg shortage too?? Was it caused by the fires?

  2. Saving this recipe, too! My son’s allergic to nuts, so I appreciate the adaptations! As for the event, I spent an hour with my therapist this morning talking about not watching it, but more so about energy balances and where to best invest one’s limited resources, keeping in mind around a probable/possible 25-years of life left to go.

    1. Interesting…therapists must be working overtime these days! I’m somewhat encouraged by my daughter’s attitude towards everything…maybe we just need to step back and let the younger people lead us.

      1. Hm, yes. Maybe we need to concentrate on getting/staying healthy and strong, ready. I almost said something about pouring support into the younger generations but then remembered Vance’s grandmother comments and threw up in my mouth a little. So we’ll have to do way more than that. lol

      2. Staying healthy sounds like a good plan. Many in my church are gearing up for battle (they’ve already held two major protests) but I’m not sure I’m up for all that again. We’ll see…

      3. Not even a whisper of activism around me, but that’s to be expected. Instead I’m getting ramped up ‘bro humor’ at work and a feeling of subtle gloating all the time.

      4. It’s hard sometimes, honestly. I try to compartmentalize, because I have to, and it helps to have something tangible to move toward.
